Louis Jordan "Lost at Sea" for 66 days

He emerged with good muscle tone, not emaciated, dehydrated, or underweight. He claims to have been cleanshaven when he left port, yet the hair of his beard is longer than his head hair. He was able to walk unaided after his rescue, despite stating he conserved energy because he had limited rations.
How did he know how long his rations would need to last? Why not limit himself to fewer pancakes to ensure the food would last longer? And how did he survive the cold of February and March when all of his clothing was soaking wet?
I was surprised he had so much food on board to begin with if he was only out for a few days fishing, and generally resided at the marina. My Dad once lived on a similar sized boat for several years and complained often about having to pay much more per pound for smaller packages of grocery items due to the lack of storage space. Unless he planned an extended trip, he didn't carry a huge supply of survival foods.
The flour required for pancakes he claims to have survived on would have been at least a 5 gallon bucket (2-3 pancakes per day), and he managed to rescue cooking oil a source of fire, and a skillet although he lost his supply of rice.
He also lost every one of his books EXCEPT his bible, in which he claims to have taken notes throughout his time at sea. There is no mention of what sort of writing utensil he had that survived not only the capsizing of the boat but also 66 days without running out of ink or graphite.
He initially indicates his LEFT shoulder as having been broken, but then displays his RIGHT shoulder where a badly healed fracture is apparent. Had he suffered a prior injury to the shoulder that bolstered his story? He DOES mention having to bail out hundreds of gallons of water with just one hand, but after that initial hardship, never again mentions anything his injury limited his ability to do, including gathering water, fishing, doing laundry, cooking, and so forth.
He seems likable, pleasant and articulate, and I hate to doubt his story, but he looks unlike anyone else I have ever seen interviewed after a similar ordeal.
